Apple cinnamon cheesecake bars

These bars are amazing and I’m happy and sad to say that I made a pan of them today and they are gone.  Well, almost gone, I saved 2 bars for my husband.  These are so delicious.

Apple Cinnamon Cheesecake bars

1 1/2 cups rolled oats

3/4 cup flour

1/2 cup brown sugar

3/4 cup (divided, see directions below) plus 4 tablespoons

3/4 cup butter flavored shortening

2 packages of cream cheese (softened)

2 eggs

1 1/2 cups chopped apples ( I use empire but you can use any kind of baking apple)

1/2 cup raisins (optional)

1/2 teaspoon cinnamon

Combine oats, flour, brown sugar, and 1/2 cup sugar, mix well.  Cut in shortening until crumbs form.  Remove 1 1/2 cups of the mixture and reserve it for topping.  Press remaining mixture into the bottom of a 9 X 13 greased pan.  Bake at 350 for 12-14 minutes.  Meanwhile, combine cream cheese, eggs, 1/4 cup sugar in a large bowl, mix until smooth.  Spread evenly over cooled crust (it doesn’t have to be completely cooled, but it cannot be hot.) Combine apples, raisins, and add 4 tablespoons of sugar, and cinnamon.  Top cream cheese layer with apple mixture.  Top it off with the remaining oats mixture that you reserved.  Bake at 350 for 20-25 minutes or until golden on the top.  Cool before you cut it.

I got this out of the Bake Sale Cookbook, I love this cookbook, of course I usually add and remove ingredients.  I added a little sugar and removed nutmeg and allspice.  Either way, its delicious!
