Caramel Popcorn!!

We are going camping this weekend and I am always looking for camping snacks.  I found this recipe for caramel popcorn and I added a few of my own ingredients.  It turned out great, and the kids loved making it.

Little did I know that if you put too much popcorn in an air popper, it starts smoking and burns out.  Soooo…. to my surprise, that’s exactly what happened. I needed 10 cups of popcorn so I figured I would just pour a bunch in and then measure out 10 cups.  WRONG! it shutoff after about 30 seconds, and I found out that the smoke alarms were working well.  The kids found much humor in this.

So, I just took a brown paper lunch bag and put the kernels in it and popped it in the microwave.  It worked great.  Here is the recipe for caramel popcorn:

10 cups popped popcorn

2 cup brown sugar

3/4 cup light corn syrup

1 stick of butter

1/2 teaspoon salt

1 tsp vanilla


1)Pop your corn

2)mix butter, brown sugar, corn syrup, and salt in a saucepan, stir until it starts to get bubbly

3)Remove from heat and add vanilla

4)Place popcorn in a sprayed (with non stick spray) bowl, pour melted mixture over the top.

5) Toss popcorn until its completely coated

6)Place on foil lined baking sheet (sprayed with cooking spray) bake at 250 for 1 hour, turn and fluff popcorn every 15-20 minutes so bottom doesn’t burn.
