20 Ways to Liven Up Your Oatmeal

Oatmeal is a breakfast staple in many homes!  I know it is in mine!  Sometimes it can get a bit boring and trite with the same old toppings!  

 

Here is a list of a few (maybe not so healthy) versions to spruce up your oatmeal and kickstart your mornings!

 

1. Mocha – stir in some instant coffee with some cocoa powder for an instant mocha oatmeal!  

2. Carmel Apple – Stir in some apple chunks and drizzle with a bit of carmel sauce.

3. Tropical Blend – Stir in some coconut and pineapple or mango for a tropical twist.

4. Raspberry Almond – stir in some raspberries and top off with some slivered almonds.

5.  Raisin Cookie – Stir in some raisins, cinnamon, and top with some brown sugar.

6.  Maple Bacon – Stir in some bacon and maple syrup for a hearty breakfast version.

7. Pumpkin Pie – Stir in some pumpkin filling and top with some brown sugar.

8. Pecan Pie – Stir in some brown sugar and top with some pecans.

9.  Chocolate Chip Cookie – Stir in some chocolate chips and walnuts for a sweet twist.

10.  Banana Bread – Stir in some bananas and cinnamon for a down home version.

11. Sweet and Salty – Stir in a few chocolate chips with some nuts or seeds for a sweet and salty version.

12. Blueberry – stir in some blueberries and cinnamon for a blueberry pie flare. I top mine with brown sugar!  

13. Apple Pear – stir in some apple and pear chunks with some cinnamon for a fruity delight.

14.  Carrot Cake – stir in some shredded carrot with some cinnamon and top with some brown sugar and walnuts for a carrot cake version.

15.  Peanut Butter – Stir in a scoop of peanut butter (and maybe a few chocolate chips) for a yummy start!

16. Honey & Banana – Start off with some banana chucks and cinnamon and stir in some honey for a sweet banana version.

17. Mandarin Delight – stir in some mandarin oranges and cinnamon and top with some slivered almonds for an Asian twist.

18.  Peach – Stir in some brown sugar and peaches and top with some slivered almonds and cream (or skim milk).  

19.  Strawberry Cream – Stir in some strawberries and cinnamon and top with slivered almonds and cream.

20.  Trail Mix – Stir in a handful of your favorite trail mix or a blend of a few listed above for your own tasty version!

Homemade Dinner Rolls!! Super easy and delicious!

These dinner rolls are really easy to make and they are delicious 🙂

Ingredients:

1 package of active dry yeast (2 1/4 tsp)
1 1/4 cups warm water
1/2 cup sugar
1 egg
1/3 cup softened butter or shortening
1 tsp salt
4 cups high gluten flour ( you can also use regular flour)

Directions
Mix yeast and warm water in your mixer with bread hook.
Let sit for 5 minutes.
Add remaining ingredients.
Mix until dough is not lumpy.
Let rise until doubled (mine took about 1 1/2 hours)
Punch down.
Let rise again.
Shape into 20 balls, I did this by splitting the dough in half, then split that in half, and again, and again to ensure that I would end up with even sized rolls. Do this until you have 20 even sized balls.
Preheat oven to 375.  
Place balls on lightly greased 11X13 pan.
Let rise again. 
Bake until golden. 
Brush with butter and sprinkle with sesame seeds (optional)

Easy sweet and salty treats!!!

These are so good.  I made these as a holiday treat, and I had to make another batch because I ate the entire batch! I wish I was joking.  Thank goodness for New Year’s resolutions!!!! The entire recipe takes about 10 minutes! Here is the recipe:

 

35 saltine crackers
1 cup butter
1 cup brown sugar
1 -1 1/2 cups chocolate chips 

Preheat the oven to 425 degrees F.

 Line a 9×12  pan with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer.

 Melt the butter and brown sugar together and boil a few minutes. Make sure you keep stirring or it will burn to the bottom of the pan! Remove from the heat and pour over the crackers, cover them evenly.

Place pan into the oven and bake for 3 to 5 minutes, or until just bubbly, again dont let it burn! Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. (about 2-3 minutes)

Transfer the pan to the freezer for 15 to 20 minutes, (I stuck mine outside in the cold)  They will form a big piece. Break up into pieces.

Gingerbread houses made easy!

Last year we bought a gingerbread house to make with the boys.  As we got out all of the gear and started making it, we realized that the frosting (glue) to keep it together was really runny, and didn’t keep the house together.  It ended with disaster, the house fell down and the kids were crying.  So this year, we decided to use graham crackers to make a smaller house.  We bought our own candy and I made the “glue”.  They turned out great, each of my kids was able to make their own mini house, and it was cheaper than the store bought gingerbread houses. 

Here is how I made the “glue” :

2 cups powdered sugar
2 tablespoons meringue powder
cold water

Mix the powdered sugar and meringue powder, add enough cold water so that it is still thick, but smooth.  You want it on the thicker side rather than runny.  Put it in a sandwich bag and cut the corner off so that you can nicely squeeze it into the sides of the house.  Pick whatever candy you choose!

 

Greek Turkey Burgers

These turkey burgers are so good! If you are looking for a healthier version just don’t add the bread crumbs.

Mix as much as you want of the following ingredients:

Onion

Garlic

Tomato

spinach

Then Add:

1/2 packet of dry ranch mix

1.5 pounds of ground turkey

1 cup bread crumbs (make sure you wet them with water, jut enough to make a paste, that’s an Italian secret to super moist meatballs 🙂 )

Mix together, make patties and cook in pan, in oven or on the grill until center is cooked (usually only a few minutes on each side)

 

Easy banana Bread-don’t throw away those brown bananas

This banana bread is super easy and it is soooo good.  You can either make one regular sized loaf, or 3 mini loaves.  Here is the recipe

Banana Bread

1 cup sugar

3 very ripe bananas

1 1/2 cup flour

1/4 cup melted butter

1 teaspoon baking soda

1 egg

Optional ingredients

1/2 cup raisins

1/2 cup walnuts

Mash bananas and mix all ingredients in mixer.  Put batter in greased loaf pan or 3 small loaf pans.  Bake at 350 for 35 minutes for mini pans or 45 minutes for large bread pan.  Insert toothpick, if it comes out clean, your bread is done.  Don’t overbake or it will be dry. 🙂

 

Ever wonder what do with that cheap bread?

Every few weeks I find super cheap bread at Walmart.  I got these loaves of French bread for just $0.60.  Lets be honest, I don’t think that I can even make bread that cheap.  So I usually buy some everytime I see them cheaply discounted.

One loaf I used that night to make subs for the kiddos.  I used the next loaf in the morning for French toast.

 The last 2 loaves I made into garlic bread and froze them.  It’s super easy, just cut them in half (lengthwise) and plaster with butter and garlic, sometimes I add shredded cheese also.  Fold them back up, wrap in foil and stick them right back into the bag, then just toss them in the freezer.  Ready to use garlic bread for your next pasta dinner 🙂

 

Fall Pumkin Bread Recipe

Doesn’t fall just inspire you to bake? It sure inspires me, although I usually have 8 little hands trying to help me!! It’s still super fun, and the best part is getting to eat our little creations.  I found this recipe for pumpkin bread and I changed a few things, it turned out great!!

PUMPKIN BREAD

1 small can pumpkin puree
4 eggs
1 1/4 cup vegetable oil
3/4 cup water
3 cups sugar
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
3 1/2 cups flour

DIRECTIONS:
Preheat oven to 350.
Mix pumpkin, eggs, vegetable oil, water, and sugar
Add dry ingredients until blended.
Grease a bundt pan, or 3 loaf pans
Bake 40-50 minutes or until toothpick comes out clean

Glaze:
Confectioners sugar, milk, vanilla.  Mix until drizzle consistency. Drizzle over top of cooled bread.

Homemade Bagels

Everyone in my house loves bagels! I make them as often as I can and we eat them for breakfast all week long.  They are easier to make than you would think. As usual, I had my helper today! And yes, that is the face my son ALWAYS makes when I tell him to smile!

HOMEMADE BAGELS
2 cups warm water
1 1/4 tsp yeast
6 tbsp sugar (4 for recipe, 2 for water)
1 tbsp salt
2 tbsp oil
1 tbsp honey
6 cups flour ( I use high gluten, but you can use all purpose, they both taste great)

Mix all ingredients except for the flour, let sit 5 minutes for yeast to dissolve.  Add flour, mix in your kitchen aid or by hand until a ball forms. Let rise an hour.  Split in half.  Cut each half into 7 bagels, roll out like a snake and pinch the ends together. (make sure you get them together tightly or they will com apart when you boil them) Now add whatever ingredients you want if they are ingredients that go inside (blueberries, cinnamon swirl, onions) Let bagels rise for 20 minutes before boiling.  Boil a pan of water and add the 2 tbsp sugar.  Boil each bagel separately (or 2 at a time) for 45-60  seconds on each side. Place on baking sheet. Add topping ingredients, sugar, cheese, sesame seeds whatever you’d like.  Bake at 500 for 12-15 minutes.  There you go, fresh, delicious, homemade bagels!  I figure these are about 10 cents each to make, a lot cheaper than store bought! Makes 14 bagels. If you can’t tell by the picture, there’s only 13 left 🙂
