Cantaloupe Vanilla Bean Jam…Oh, my!

I had some extra cantaloupes that were starting to get a little too ripe so I decided to make jam with them.  This jam is beyond words, if you like cantaloupe you will LOVE this jam! It is super easy to make too!  Here is the recipe:

Cantaloupe Vanilla Bean Jam

5 cups of cantaloupe (1 large cantaloupe or 2 small)
3 cups sugar
1 vanilla bean
2/3 cup all natural dutch gel (pectin) or 2 packets of regular pectin
1 teaspoon margarine (to stop foaming)

1)Remove skin and seeds from cantaloupe, chop or blend 5 cups of cantaloupe
2)Pour into pan, add sugar.
3)Slice vanilla bean down the middle (long way) and scrape vanilla beans into pan.  Then place the entire bean into the pan and bring to a boil
4)Remove and discard the vanilla bean pod
5) Add pectin or dutch gel
6)Add margarine, bring to a boil and stir frequently for 3 minutes.
7)Ladle into jars and process in canner for 10 minutes.

  2. 1/2 cup yogurt - any flavor works!
  3. 1/4 cup fruit (blueberries, strawberries, raspberries, black berries, pineapple etc.)
  4. 1/3 cup crunchy cereal
  5. maraschino cherries (optional for top)
Instructions
  1. Peel banana, and cut lengthwise down the middle. Place in bowl and spread open
  2. Spoon yogurt over banana
  3. Top with cereal and cherries
  4. Grab a spoon and enjoy!

Ingredients
  1. 4 CUPS FLOUR
  2. 2 TSP SUGAR
  3. 2 1/4 TSP DRY YEAST (1 PACKET)
  4. 2 TSP SALT
  5. 1 1/2- 1 3/4 CUP WARM WATER (warm enough to activate the yeast but if its scalding hot you'll burn the yeast and it won't rise. Warm like bathwater is what you want)
  6. 3 TBSP OLIVE OIL
Instructions
  1. Mix together the dry ingredients, then add warm water.
  2. Knead, or put in your mixer with a dough hook until smooth.
  3. Let rise for 45 min. Split in half. You can either make 2 pizzas or freeze the other dough.
  4. Roll out on floured surface. Add desired toppings, bake at 425 for 10-15 min. Make sure you check it at 10 so it doesn't burn.

Wonder what to do with those cheap tortillas…Make taquitos!!

Remember the Cheap Tortillas I listed here?  Well I wondered what to do with them.  I came up with a easy and cheap meal and oh did I mention that it was DELICIOUS!!

Beef Taquitos

6″ Corn tortillas
1 lb ground beef
Chili powder
1/2 cup water
Salt
1 can salsa
shredded cheddar cheese
Sour cream
Rice
oil (for frying)

Directions

1) Brown ground beef
2) Once browned, add chili powder salt and water (add enough chili powder until you like the taste, or you can just use taco seasoning)
3)Heat oil in pan
4) line (2-3 tablespoons) of ground beef at edge of tortilla, add cheese and salsa.  Roll up starting at filled side of tortilla
5)Place creased side down in pan of hot oil
6)Cook until browned on each side
7)Serve with rice, salsa, and sour cream

Homemade Peach Jam

I LOVE making jam.  My kids eat it all year, and it makes great gifts.  Peach season is in full swing, and I love making jam with them.  Here is a great recipe.  Instead of using sure-jell or pectin, I use all natural dutch gel.  It can be found at bulk food stores, amish country stores, etc. I love it and it seems to work much better, and it is cheaper than the boxed pectin.

Peach Jam

4 cups prepared peaches (I peel, pull out the pit, then throw the peach in the blender)

1 tsp lemon juice

5 1/2 cups sugar

1 tsp margarine

1/3 cup dutch jell or 1 box sure jell pectin (or any boxed pectin)

 

1) Peel, pit and blend peaches.  You may also just mash them

2) Place blended peaches in a pot, add pectin and lemon juice (the lemon juice keeps the jam from turning darker).  I like a nice light colored jam. Especially if I am going to use them for gifts.

3) Bring to a boil, stir while boiling for 1 minute

4)Add sugar

5) Cook until boiling again

6)Stir while boiling for one minute again

7)Place into prepared jars, leaving 1/4″ head space

8)Process in water bath canner for 10 minutes

Moist and Delicious Banana Muffins

These Banana Muffins are a perfect treat for Saturday morning, or when you need to eat on the run for those busy weekdays.  Your kids will LOVE them, and it makes breakfast a snap!  This recipe is super easy, and they turn out great!

 

I added 1/2 cup chocolate chips for my kids, and they turned out super delish!

 

Banana Muffins

 

3 large ripe bananas, mashed

3/4 cup granulated sugar

1 egg

1/3 cup butter, melted

1 Tsp vanilla extract

1 1/2 cup flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

 

Directions

 

1. Preheat oven to 350° F.  Line muffin pan with paper liners, or use non-stick spray.  Sift together the flour, baking powder, baking soda, and salt, and set aside.

2.  Combine bananas, sugar, egg, melted butter, and vanilla in a large bowl. Fold in flour mixture (do not blend), and mix until smooth. Scoop into muffin pan.

3.  Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 20-25 minutes.  Muffins will spring back when lightly tapped.

 

Tip: Do not blend the flour in, fold it in by hand.  If you blend it, it will make your muffins dry.

 

Other possible add-ins:

– 1/2 cup pecans

– 1/2 cup walnuts

– 1/2 cup coconut

– 1/2 cup chocolate chips

– 1/2 cup peanut butter chips

– streusel topping

 

Streusel Topping:

1/2 cup nuts

1/2 cup brown sugar

1 tsp cinnamon

2 Tbsp melted butter

Mix together and sprinkle over top of muffin mixture.  Bake as directed.

 

 

Lighter Version:

-substitute applesauce for the butter

-substitue whole wheat flour for the white flour

-substitute egg whites for the egg

 

Low Calorie Mocha Smoothie

I got a GREAT deal on a ninja blender from Kohl’s last week, I got it in the mail today and I was so excited to try it out.  There was a recipe for a low calorie smoothie, so I decided to give it a try, it was AWESOME!!

Low Calorie Mocha Smoothie

1/2 cup brewed coffee

1/4 cup fat free milk

1 tablespoon low fat chocolate syrup

1 teaspoon splenda (or equivalent sweetner)

1 cup ice

Mix together in your blender and ENJOY!!

I absolutely love cooking up fresh summer vegetables! I made this the other night and it was so delish that I needed to share it with you.  There is nothing like fresh fruits and vegetables in the summer.

Summer vegetable medley
2 zucchini
2 yellow squash
2 large tomatoes
1 onion
Olive Oil
Basil
Salt
Teriyaki sauce

Directions
1)Heat a frying pan with olive oil
2)Add your vegetables
3)Sprinkle with basil, teriyaki and salt (use as much or as little as you want)
4)Cover and cook on low until vegetables are soft
5)ENJOY! This is super easy to make!

Clam Casino Dip Recipe

If you’re looking for a delicious appetizer for a party or to take as a dish to pass….this is it!  I get requests for the recipe every time I take it to share.  Enjoy!!

 

Clam Casino Dip Recipe

 

3 cans chopped clams

1 small jar pimento

1 jar or package of real bacon bits

1 cup finely chopped green peppers

2 medium onions, finely chopped

1/2 stick butter (1/4 cup)

6-8 tbsp bread crumbs

1 Tbsp Tabasco sauce

1 Tbsp dried parsely

salt & pepper to taste

 

Directions:

 

1. Preheat oven to 375°.

2.  Drizzle large saucepan with olive oil and saute onions & peppers.

3.  Drain half the juice from each can of clams, and discard remaining.

4.  Add clams and remaining ingredients to onion & pepper mix, and combine until evenly mixed.

5. Place in 2 quart casserole dish and bake uncovered for 45 minutes.

 

Serve with crackers or vegetable sticks.

 

Tip: Keebler Toasted crackers hold up the best with this dip, but any cracker can be used.  

Super Easy Pineapple Upside down cake

Yesterday was my Anniversary and my husband LOVES pineapple upside down cake.  This recipe is super easy to make and its delicious!

Here is what you need:

1 stick of butter or margarine
1 cup brown sugar
1 can pineapple slices
1 jar maraschino cherries
1 yellow cake mix
Plus ingredients needed for cake mix

 

Directions:

1)Heat oven to 350.

2)place stick of butter in 13X9 pan and put in oven until butter melts

3)Sprinkle brown sugar over melted butter

4)Arrange pineapple slices over top of brown sugar

5) Put a cherry inside each pineapple slice, and arrange more around the pan

6) Mix the pineapple juice from the can with water until you have 1 cup.  Make the cake batter as directed but use the pinapple juice/water mixture in place of water on the cake mix directions

7)Pour cake batter into pan over top of the pineapple and cherries.  Bake 40 minutes, test with a toothpick to ensure cake is baked all the way.

8)Take your plate and put it over top of the pan and flip pan over onto plate.  Let sit for 5 minutes, then remove pan from top.

9)Serve with whipped cream 🙂
