Cinnamon Swirl Coffee Cake (bread)…..YUM!

Here is a recipe for cinnamon swirl cake, although I like to call it cinnamon swirl bread.  There is a lot less guilt when your eating it if you call it bread rather than cake!  Either way, its DELICIOUS!

Cinnamon Swirl Cake Bread Recipe

3/4 cup Butter (soft)
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1 cup sour cream
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 c walnuts (optional)
filling
1 tsp cinnamon
1/4 cup sugar

Preheat oven to 400. Grease bottom of bundt pan or 2 bread pans.  Beat butter and sugar, add eggs one at a time and beat.  Add vanilla and sour cream.  Mix in flour, baking powder, baking soda, walnuts.  Batter should be smooth.

If using bundt pan, mix 1 tsp cinnamon and 1/4 cup sugar, pour half of cinnamon mixture in bottom of bundt pan, pour half batter, pour the rest of the cinnamon mixture, top off with batter.  Bake 10 minutes at 400 and turn down to 350, bake 40 minutes at 350 or until toothpick comes out clean.

If using bread pans, pour half batter in each pan, pour cinnamon mixture over batter, pour the rest of the batter on top, then top off with remaining cinnamon mixture.  Does that sound confusing???? you want a layer of cake, then a layer of cinnamon and sugar, then a layer of cake and a top layer of cinnamon and sugar 🙂

Bake the same as a bundt cake.  10 minutes at 400, turn down to 350 and bake 40 minutes.

I like to top mine off with a glaze once its cooled 🙂

Add powdered sugar with some milk or water until it makes a glaze, pour over top but only after its cooled.  ENJOY!
