Cinnamon swirl quick bread

This quick bread recipe is awesome and it makes a great gift!!  I have found when you make quick bread you have to cook it for precisely the right amount of time. If you don’t cook it long enough then it is too wet to cut, and if you cook it too long then it’s dry! Make sure you check your bread and make sure your oven isn’t too hot!

Cinnamon Swirl quick bread

Bread Mix

2 cups flour

1 tablespoon baking powder

1  1/4 cup sugar

1 egg

1 cup milk

1/3 cup vegetable oil

Cinnamon and sugar top and filling

1/2 cup sugar

3 teaspoons cinnamom


1 cup powdered sugar

1 tsp milk




Preheat oven to 350, grease a loaf pan (9×5) Mix together all of the bread ingredients until smooth.  You can use a mixer or by hand.  Mix together top and filling (cinnamon and sugar mix).  Pour of the batter in pan, sprinkle with the cinnamon and sugar mixture.  Pout the rest of the batter over top.  Top off with remaining cinnamon and sugar.  Bake 45 minutes. Insert toothpick to make sure it comes out clean.  Remove from oven and scrape sides with a knife while its cooling, this will make it easier to get out of the pan.

To make glaze: DO NOT PUT GLAZE ON UNTIL YOUR BREAD IS COMPLETELY COOL! Start with 1 cup of powdered sugar, add 1 tsp milk and more until its a consistency that you like.  Glaze the top.
