Easy No Bake Cheesecake


This No-Bake Cheesecake is perfect for last minute company, a quick dish to make and take, or an easy and fast fix to treat yourself to without turning on the oven!


1-1/2 cups crushed graham cracker crumbs (24 squares)
1/4 cup sugar
5 Tbsp butter, melted


1.  In a small bowl, combine the crumbs and sugar; add the melted butter and blend well. Press onto the bottom and up the sides of an ungreased 9-in. pie plate.
2.  Before filling, place in freezer for 10 minutes or refrigerate for 30 minutes.


Cheesecake Filling

2 – 8 oz. packages cream cheese, softened
1 can sweetened, condensed milk (14 0z. can)
1/4 cup lemon juice (fresh is best)
1 tsp vanilla extract



1. Cream together the cream cheese and sweetened condensed milk until thoroughly blended and smooth.
2. Add in the lemon juice and vanilla and beat until blended.
3. Pour into the prepared graham cracker crust.
4. Cover and refrigerate until set, about 2 1/2-3 hours.  For a quicker dessert, divide into smaller individual dishes.  Refrigerate until set, about 1/2 hour to 1 hour.
5. Top with your favorite toppings.
