Greek Salad with Greek Salad Dressing:

 

Salad Ingredients

1 large romaine lettuce, chopped
3 Roma plum tomatoes, cut in wedges
1 cucumber, peeled and chopped
1 red onion, cut in slices
1 green bell pepper, slicesd
1/2 lb feta cheese, crumbled
1 cup kalamata olives (black olives can be substituted)
pepperoncini peppers or banana pepper slices

You can also add chicken or steak to the top.   I marinade in the greek dressing overnight.

 

 

Dressing Ingredients

1/4 cup red wine vinegar
1/4 cup white wine vinegar
1 tsp Dijon mustard
1 tsp salt (more as needed to taste)
1/4 tsp pepper (more as needed to taste)
1/4 tsp garlic powder (or 1 small clove)
1 cup canola oil
1 tsp dried Italian Seasoning

 

Combine all ingredients except oil and Italian seasoning in a blender or food processor.  With the blender going, add the oil slowly and combine until dressing is smooth.  Mix in the Italian seasoning and serve over salad.  Keep leftover dressing in refrigerator for up to 2 weeks.

 

Serve with toasted, buttered pitas. Bake pitas at 400 degrees for 5-7 minutes or until crispy.
