Looking for a cheap snack or side dish for your dinner?

I had never made cornbread before.  My grandmother who went through the great depression made it at every meal, and she still does.  Every Sunday we have a HUGE meal at my mom’s house, and my grandma always brings her famous cornbread.  There is a reason for that, its cheap, easy and delicious.  She had 5 children, so she was probably always looking for something cheap and easy.  Well anyway, I’m always looking for cheap and healthy snacks for my kiddos too.  I shouldn’t say healthy because its not exactly a healthy snack but it beats cookies and donuts right?  So I started making homemade cornbread for my kiddos and they love it.  Its super easy, and when I say that I mean no brainer, no thinking, simple as a recipe gets.  Here is the recipe, its doesn’t get much cheaper than this either!

Homemade Corn bread

2 cups cornmeal

2 cups flour

1 cup sugar

1 Tablespoons baking powder

2 teaspoons salt

3/4 cup oil

2 eggs

2 cups milk

 

Preheat oven to 400.  Mix all ingredients together until there are no lumps or clumps.  Pour into a 9X12 greased baking pan.  Bake 20-25 minutes.  Does it get any easier than that?
