Raspberry Ribbons Cookie Bars


1 cup butter, softened
2 1/2 cups flour
1/2 cup sugar
1 tsp vanilla
1/4 tsp salt
1 egg, beaten
seedless raspberry jam



3/4 cup confectioner’s sugar
1/4 almond extract
3-4 tsp milk

Combine together in a separate bowl.



1. Beat butter for 30 seconds.

2.  Add half of the flour, sugar, egg, vanilla, & salt and mix until combined.

3. Beat in remaining flour, and mix until dough forms into a ball.  Knead slightly to form a ball.

4.  Divide into 8 balls on lightly floured surface.  Roll into 9 inch long ropes.

5. Place on ungreased, parchment lined cookie sheets 2 inches apart.

6. Press a groove down each rope (wooden spoon handle works great) and bake at 375 degrees for 10 minutes.  Remove from oven and fill grooves with raspberry jam.  (I put the jam in a ziplock bag, cut off a small corner, and dispense into the grooves)

7. Bake for 5 more minutes.  Cool.  Cut into 1-2 inch diagonal bars.  Drizzle glaze over bars.
