Soft and fluffy dinner rolls!


I found this dinner roll recipe and loved it, I made a few changes and the result was superb.  These rolls are light and fluffy and they work every time! 

Soft and Fluffy Dinner Rolls

4 cups flour
1/2 cup sugar
1 package instant dry yeast
1 1/4 cups warm water
1 tsp salt
2 eggs
1 stick butter (room temperature)

You can either knead the ingredients together, I am way too impatient for that.  I put all the ingredients into my kitchen aid mixer with a bread hook.  Mix until smooth.  Let rise for 2 hours (or until doubled in size).  Punch down dough.  I like to divide the dough in half to determine how large to make the rolls.  You will get 20 rolls from this recipe.  So divide the dough in half, and shape each half into ten balls.  Place into a greased pan (needs to have taller sides, not a cookie sheet).  Bake at 425 for about 15 minutes, test by removing from the oven and pulling middle apart, you’ll be able to see if its still doughy in the middle.
